After earning his degree in industrial chemistry, becoming a professional chef was a eureka moment for Davide Pauletto. His boundless, innate curiosity inspired him to learn everything there was to know about the raw materials he uses so that he can transform them, making a virtue of all their properties.

Studying raw materials gives him a better understanding of the substance and nature of his ingredients, which makes it possible to eliminate any synthetic additives and to create as natural a cuisine as possible.

Davide combines his intuition and experience with his extensive knowledge of the ingredients he uses in order to develop amazing culinary creations that are flavorful, balanced and light.
